Fried Rice with Pineapple.

Ingredients:
3 cups of cooked rice. (That would be about 1 1/2 cups of uncooked rice).
1 1/2 cups of canned chopped pine apple without the liqids.
2 chopped onions.
1 cups of mushrooms. (Use shitaki mushrooms, if yo don't have any use fresh champignon, canned are also good but need to be fried for a longer time)
2 eggs.
2 spoons of sugar.
juice from half a lemon.
2 spoons soya sauce.
2/3 cups of roasted peanuts.
mixture of chopped coriander, grated ginger, chopped garlic, few drops of lemon juice. You need a spoon of the mixture, the ingredients are optional, you can also add some chilli pepper. If you don't have all the ingredients use at least some garlic and lemon juice.

Process.
Heat a pot with some oil, fry the onions for two minutes, add chopped mushrooms and fry for three more minutes.
Add the pine apple, the peanuts, the sugar, some salt, soya sauce and lemon juice, stir fry for two/three minutes and take everything out and put on a plate.

break the eggs into the same pot and mix the mixture into them, quickly add the rice and the ingredients you just took out.
